Virgin Pina Colada
At one time virgin drinks meant, either Pina Coladas or Strawberry Daiquiris made from frozen Bacardi Mixers from the supermarket freezer case. While I have fond memories of those days, it might be a bit more practical and flexible to make this shaken version from Coco Real.
If you would like to reduce the sugar in this drink then I would recommend replacing the Coco Real with canned coconut milk. If you go that route, submerge the unopened can in a bowl of warm water for 10 minutes and then shake vigorously to combine the fat and water prior to opening.
3 oz Coco Real
3 oz Pineapple juice
1 oz soda water
Place all ingredients in a cocktail shaker with cubed ice. Shake vigorously and strain into a tall glass, either a Collins or hurricane glass, over fresh ice. Serve with a cherry.
